I have always had a love for finding fun ways to exercise as I am one who would rather find a good movie to watch then go for a run. One way I have always gotten off the couch is participating in the color run with Color Me Rad. I was fortunate enough to go to Philadelphia in 2013 and 2016 to run this 3.2 mile race. Although, having colored corn starch thrown at your face doesn't sound to pleasing, I would recommend it to anyone as there is great music and many opportunities to meet new people. 

CONCERTS

When I was little I always used to watch my oldest sister bake away in the kitchen. She would bake cupcakes, cakes, and all sorts of pastries. Because of this, she inspired me to become a baker as well. I do not compare to the shows you see on tv but it is something I have always loved doing. From salted caramel cupcakes, to mint chocolate chip cupcakes, to s'mores cupcakes, I love to try new flavors whenever I can.

My Favorite Frosting Recipe:

Ingredients:

  • 1/2 cup unsalted butter

  • 1 cup packed light or dark brown sugar 

  • 5 - 6 Tablespoons heavy cream, divided

  • 1/4 teaspoon salt

  • 2 and 1/2 cups confectioners' sugar, sifted

Directions:

  1. Melt the butter in a small saucepan over medium heat. Once melted, add brown sugar and 2 Tablespoons of heavy cream. Whisk constantly until sugar is dissolved. Add salt. Allow to bubble for about 2 minutes, whisking every 30 seconds or so. Remove from heat, pour into a heat-proof mixing bowl, and allow to cool for about 30 minutes.

  2. With a hand or stand mixer fitted with a whisk attachment, beat in 2 cups confectioners' sugar and 3 more Tablespoons of heavy cream. Slowly add 1/2 cup more confectioners' sugar until you reach the desired consistency. Add 1 more Tablespoon heavy cream if you find the frosting too thick.

  3. Frost cake or cupcakes and garnish with salted caramel sauce, if desired.

Coldplay, Of Monsters and Men, and Bon Jovi are just a few concerts I have been lucky enough to go to. My first concert was when I was six years old and ever since then I have been hooked. Not only do I love listening to all different genres of music, I love watching the performance. My favorite concert of all time was the Coldplay concert. I enjoyed it so much I attended their concert again for the second time. I think some of the best songs come from the 1970's but I am always open to new songs no matter what genre and can't wait to see what new generations come up with.
